Here's my fast and foolproof method for cooking rice in a hurry.

  • I've always wondered why Non Asians make rice cooking so complicated? Still got no answer. The reason why Asians don't put too much flavor on the rice, is because it has to balance our other dish that has a lot of flavor. And besides we have flavored rice on our rice cakes. I still have to find someone do it the rightway on RU-tv.

  • Also worth noting about reheated rice: It has a higher nutritional value (www.healthline.com/nutrition/cooling-resistant-starch#section3) but because it can contain a bacteria which survives cooking, rice you plan to keep and reheat should be cooled and refrigerated as soon after cooking as possible, leftovers served within one day and should *never* be reheated more than once.   • I have had terrible luck with rice. Always frustrated me. I have made this one three times now and its been perfect each time (and about to start the 4th). Thanks for the pointers and wit (especially the latter during this!)

  • This is from the Red Beans and Rice episode. I modified the Red Beans to work in my slow cooker but the rice has been this recipe for years.

  • As a kid growing up my favorite hot breakfast on a cold morning was steamed rice with a little milk, butter, sugar, and cinnamon. Almost a very lumpy horchata. Although i had never heard of horchat 60 years ago.

  • If only we all had gas stoves. Every time I moved I got a different electric stove and a different, fussy sweet spot for simmering rice. The oven method you gave us for brown rice is great--wish you offered a version for white rice. My current electric stove is SO fussy I never found the best setting and got a rice cooker instead. And I've been cooking rice for over 4 decades.

  • Alton, I have always struggled to cook rice. with boiling in the water then adding the butter and seasoning AFTER, and it had never came out completely cooked. Thank you for providing this, this will definitely change how I prep to cook rice. I don't think I would have ever thought to season and butter before starting the actual cooking.

  • If anyone is wondering if this method works for a rice maker or brown rice; yes to both. I always was upset with my brown rice bubbling over. Using this method of browning it in butter before hand, then cooking it in a plain old rice cooker, NO BOIL OVER! This man has forever changed my life and I couldn't be more grateful.

  • Great stuff, Alton! Most people raised in a full or partially Chinese household learned to make rice blindfolded and perfect every time. Your ratio is right on - <a href="#" class="seekto" data-time="182">3:2</a> water:rice. Toasting the rice is something most of my Chinese friends think is weird as hell, but I love your results. In the method I learned, you started off all of the rice and water at room temp and over high heat. Once crater-like holes begin to appear across the surface, turn the heat down to its lowest setting, cover the rice, AND LEAVE IT ALONE FOR 10 MIN. After that turn off the heat and wait 5 more minutes. Remove the lid and fluff with a fork. The Chinese idea of perfection in rice is where each grain stays separate, but is perfectly soft. I've been doing this way for 40 years, and can't remember ever getting mushy or under-cooked rice.

  • It's really interesting on how a simple thing like rice can be cooked way differently based on culture, style, recipes, and so on. I am not even talking about a dish, just simple steam rice. In my case, the usual rice I make is rinsed quite a few times, for sushi, I can go as high as 10-12 times. As for the cooking... eyeball quantity, eyeball water, cover, bring to a boil, play with the heat a bit and let it rest lol.

  • If you want to wash your rice it is too soggy to fry in butter- any ideas? I’ve made this recipe about 4 times now and on the last time washed the rice. Maybe I should wash it then wait an hour or so so it can dry.

  • You can rinse the rice under cold water until the water is clear to make it less sticky. Run cold water in the pan slowly and use your and to squeeze and move it around until the water is clear....less starch
